Happy end of summer!

It’s the final week of August and I’m slowly saying goodbye to summer here. Our house has been moving into the mindset of a new school year, activities, schedules, and everything associated with the shift back into fall. Rooms have been cleaned out, supplies and clothes have been procured, and I think I’m as ready as possible for my family to start the fall semester. 

With all the preparations, I’m ready to move away from the light summer cooking I’ve been doing, and dive back into making some comforting yet simple dinners that are still delicious to eat. One of the favorites around here is what has come to be known as Back-to-school chicken. It’s seasoned and coated with breadcrumbs, then roasted in the oven. My kids love to eat it off the bone and everyone loves the crunchy, savory crust. 

For dessert, make some blondies. I know you can make these from boxed mixes, but these take the same amount of time and taste so much better. One batch will yield 16, and they are quicker and simpler to make than a batch of chocolate chip cookies. Also, nothing makes your house smell as good as blondies baking in the oven.
